Chocolate Hazelnut Cookies made with Nurishment, served with a Blueberry Swirl Hot Chocolate
Chocolate and hazelnut is such a festively fabulous combination, and these cookies have the additional goodness of Nurishment. Poured straight from its iconic can, it increases the protein content, vitamins and minerals.
Let's get started!
Method
-
1
In a small bowl combine the baking powder, cocoa powder and flour and put to one side.
-
2
In another mixing bowl cream the butter and sugars together. Add the yolk, hazelnut flavouring and vanilla extract and mix until smooth.
-
3
Add the Nurishment and whisk. It will look split, but will come together when you add the flour.
-
4
Add the flour mix and stir or whisk until just combined. Stir through the chocolate chips and scoop into balls of around 20g. It may look very wet, so the easy way is to chill the dough for 15 minutes in the freezer before scooping.
-
5
Whilst it’s chilling, pre heat your oven to 170ºc and line two cookie trays. Then add your cookie dough to a tray and bake for 10 minutes.
-
6
Allow to cool slightly and drizzle with a little melted chocolate and scatter with toasted hazelnuts.
-
7
For the hot chocolate, heat the milk and Blueberry Nurishment in a pan or milk frother, then serve with toasted marshmallows.
